It’s 4 p.m. on a recent afternoon, and Chef Kandy Williams, the culinary instructor at Hot Bread Kitchen at the Manny Cantor Health Center in Lower Manhattan, is putting the finishing touches on the lesson plan for the evening’s class. Williams, herself a program alum, will discuss and demonstrate the finer points of roasting. On the menu: cauliflower steaks with vegetables and lemon herb marinade.
Launched in 2009, Hot Bread Kitchen’s mission imparts vibrant instruction in the food trade to immigrants, people of color, women and gender-expansive people, helping launch careers in the culinary industry. Programs of varying length offer job skills training and entrepreneurial support.
